Our steaks begin simply and intentionally—lightly seasoned with salt, pepper, and brushed with house rendered tallow, then cooked to your liking under a top-fired broiler to lock in flavor and create a perfect crust. Just before serving, each steak is finished with a slice of lime, melted butter, and fresh chopped parsley adding a subtle brightness that enhances every bite.

The steakhouse has always held a special place in the Knight family story. Chef/Owner Charles Knight was first introduced to the craft in a classic Colorado steakhouse. That very steakhouse became the gathering place for family celebrations, milestones, and lasting memories, shaping the values that define C. Knight’s Steakhouse today.

Inspired by that tradition, our goal is to create the same meaningful experience for every guest who walks through our doors in El Dorado Hills. We’re committed to serving prime steaks on sizzling plates, thoughtfully paired with fine local wines from Amador, El Dorado, and Napa Counties, all in a welcoming setting designed for connection. Our mission is simple: to be one of the top steakhouses in Northern California and a trusted community gathering place where family, friends, and unforgettable moments come together.

A Secret behind our steaks

At C. Knight's Steakhouse, we intentionally do not offer traditional steak sauce. While often used to add flavor and acidity, we believe steak sauce can overpower the natural character of a perfectly cooked steak. Instead, every steak is finished with our signature fresh lime garnish.

A squeeze of lime adds a clean, bright acidity that completes the flavor profile without masking the meat itself. With the bitterness of the char, the natural sweetness of the steak’s juices, and the balance of salt already present, acidity is the final element—and lime delivers it beautifully. The result is a more refined bite that enhances the steak and allows it to pair seamlessly with wine, while letting the true flavor of the beef shine through.

A 16-ounce USDA Prime New York strip, cooked Pittsburgh-style on searing-hot steel plate to create a bold, flavorful crust. Served with a half portion of sautéed mushrooms and a half portion of our signature Green Phunque aka Spinach Souffle, and perfectly paired with a robust Cabernet Sauvignon.

At C. Knight’s Steakhouse, we cook our steaks using a top-fired broiler named Clyde after Charles' father. The heat source comes from above and the steak is seared from the top down helping to form the crust on the steak. Because there is no heat source beneath the steak, any natural drippings do not flare up, avoiding the smoky or “fuel” flavors often associated with traditional bottom-heat gas grills.

This method allows the pure flavor of the steak to shine through—something especially noticeable in our dry-aged cuts, where the beef’s natural richness and subtle nutty notes take center stage. Unlike grills that add smoke or charred flavors, our approach introduces no additional taste beyond the perfectly seared beef itself. By cooking this way, we allow each steak to reach its full potential and present the most honest, refined expression of flavor.

The Jay Harwood Room is available for private gatherings of up to 20 guests. Reservations are handled on a case-by-case basis, and a deposit may be required to secure the space.

This intimate room is a favorite for engagements, birthdays, anniversaries, work lunches, and other special occasions—offering a comfortable setting to gather, celebrate, and connect.
